Possibly the most popular beet grown, the Boltardy beet is renowned for its reliability in producing smooth, globe-shaped beetroots. The sweet, dark red roots are excellent for pickling or slicing raw, and the succulent leaves are especially ideal for baby leaf salads. This particular variety is slow to bolt, and can be planted early in the season.
