Cowpeas, also called black-eye peas for the single black spot that grows on each bean, are an excellent choice for southern climates. Domesticated in Africa, cowpeas were one of the earliest crops ever to be farmed. The California Black-Eye cowpea is an extremely heat tolerant legume that grows in a compact, bushy form. Cowpeas are often picked green but can be picked dry for winter storage.
