This mild chili pepper is one of our top choices for a home gardener! When green, this pepper is a called a poblano, and is an ideal candidate for rellenos or other stuffed pepper dishes. As it matures, it develops a rich red color and fruitier flavor and is then called an ancho; when dried, these ancho peppers make for an excellent chili powder.
